So! I ventured into Laura's recipe and love love love it. It is so easy, so affordable, and well for a donut, pretty healthy! Everyone's got their say on it and I have heard time and time again, "If I am going to have a donut, I'm gonna have a donut." Well I'll have you know that these are not Dunkin Donuts, they are not white death deliciousness by any means. That said. They are delicious and dunkable!
The recipe is at Laura's website. Here are my comments on it:
- I used coconut oil.
- I used sucanat as the sweetener.
- I didn't have a donut cutter, so I used 1 big circle cookie cutter and 1 small circle cookie cutter. This worked but a biscuit cutter or donut cutter would be better.
- I rolled some a little too thick and so it didn't "round" like a donut. You can see in the picture. I think she said 1/2 inch thick, so be sure to do that or a little thinner.
- Easy to make, a great thing to do with kids. You can't really mess it up.
- I would also add a glaze or powdered sugar every once in a while.
- Her recipe makes 12 full size donuts and 12 donut holes. The cost varies but for me it was $3.27 for the recipe. Making it 20 cents a donut. Did you hear that? That means you could have 5 of these for the price of 1 donut at the donut shop.
- Wonderful fresh! Not so great the day after. Nelson thought they were fine. But I'd suggest no leftovers. I had thought to make a batch, knowing we wouldn't finish them all that morning, hoping to pack for his lunches during the week. I wouldn't do that again. Just enough for the day.
I will enter a donut shop again, I will eat an unhealthy donut, but not quite as often. This recipe will save money, be a little healthier, and we like them!

And I LOVE the pictures you put on here. It is so nice to see Nelson and Lesley and the girls. You need to let Nelson take a picture of you and put that on once and awhile!! He is certainly a busy guy! I was looking forward to you coming home after Christmas, but I can keep up with your interesting life with this blog! Keep up the good work!! Love you and miss you.
