Eating in Season: Mashed Sweet Potato Delight

Oh. my. Sweet potatoes are so good. They are so good to eat and so good for you. You have got to try them. Well, that is if you haven't. And if you have, and haven't had them mashed, then you have got to try them mashed. I have never personally prepared sweet potato, simply to enjoy it. I think I may have tried a sweet potato burrito once. Yes. I did. It was awful. Burritos are not to be sweet in my book. Sweet potatoes are supposed to be sweet. I hope that by now you are convinced of how delicious they are. (I write this mostly for my sisters, because I think they will both make a face on the inside, not wanting to give this a try. Just a guess.)

I looked up how to prepare a sweet potato because I hadn't the slightest outside maybe baking it just like a normal potato. Sure enough, that is what you do. You can steam them, boil them, and even stir-fry them. But that sounded like too much work. Here is what I did to have Mashed Sweet Potato Delight.


Mashed Sweet Potato Delight



  1. Heat toaster oven (or regular) to 400 degrees

  2. Wash and scrub sweet potato and prick a few holes in potato

  3. Bake sweet potato in oven for 1 hour

  4. Let cool 5-10 minutes

  5. Peel, if not organic, to avoid harmful dyes or coloring (The peeling is so easy. When handle-able, just pull the skin to break and it should peel off without a knife.)

  6. Mash in bowl with 1 Tbsp. butter per potato

  7. Sprinkle with sea salt

  8. Enjoy! Mine was gone in 2 minutes.

So, did I mention how much I love sweet potatoes? I can hardly wait to prepare this for Nelson. He does not like sweet potatoes but like the rest of you out there, who haven't really given it a chance, I think he can be won over. After all, he has probably been eating it with all the marshmallows and additives. Keep it simple. God created our food with flavor. Even better, this is the season! Our local grocery store has them at 39 cents a pound right now. Go get some! This is the time. This is the first year I have tried to eat in season, to be frugal in our food budget. And it's getting easier and easier with simple foods like this. Let me know what the results are for you or your recipes using sweet potatoes.
